APPLE MUFFINS 
1 c. chopped apples
2 c. cake flour, sifted
1 tbsp. baking powder
1/2 tsp. salt
1/3 c. sugar
1/3 c. butter
1 tsp. grated lemon rind (optional)
1 egg
1/2 c. milk
1/4 tsp. cinnamon and 1 tbsp. sugar, combined

Sift dry ingredients into a bowl. Cut in butter until crumbly. Sprinkle in rind. In a small bowl, beat egg slightly. Add milk. Beat to combine. Add to the flour with the apples, stirring to moisten. Spoon into muffin cups. Sprinkle with cinnamon and sugar mixture. Bake at 425 degrees for 20-25 minutes. Serves 12.
