TOFU ENCHILADAS 
8 oz. tofu granules
3/4 c. grated mozzarella lowfat cheese
2 green onions
1/2 c. mock sour cream
1/2 tsp. salt, optional
1/4 tsp. pepper, optional

SAUCE:

1 (4 oz.) can tomato sauce
1/2 green pepper, chopped
2 tsp. chili powder

TOPPING:

1/3 c. grated low fat cheese

Cook tofu in a frying pan; remove from heat, stir in remaining filling ingredients. Place 2 tablespoons filling in the center of each tortilla, roll up. Place roll seam side down in 9 x 13 inch baking dish.

In a saucepan combine all sauce ingredients; bring to a boil, simmer 5 minutes. Pour over enchiladas in a dish. Top with grated cheese. Bake in 350 degree oven for 20 minutes. Serve hot. Serves 4-5.
