ABSOLUTELY WONDERFUL CHICKEN ENCHILADAS | |
FILLING: 2 c. cubed cooked chicken 1 c. Ricotta cheese Salt and pepper 1/2 c. chopped ripe olives SAUCE: 1 1/4 c. prepared Salsa Sauce (Pace) 2 tbsp. chopped green peppers (optional) TOPPING: 1 1/2 c. shredded Cheddar cheese Sour cream Mix filling ingredients in a medium bowl. Using 8 corn tortillas (6 inch diameter) softened according to package directions, divide filling onto tortillas. Roll up tortilla. Put seam side down in 9 inch square baking dish. Pour sauce ingredients over tortillas. Cover dish with waxed paper. Microwave at High for 10-11 minutes, rotating dish once during baking. Sprinkle with cheese. Microwave at medium for 5 minutes. Serve with sour cream. |
