SOUTHERN BANANA-PINEAPPLE CAKE 
1 1/2 c. flour
1 c. sugar or 1/2 c. honey
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
2 eggs
1/2 c. oil
3/4 tsp. vanilla
1 (6 oz.) can crushed pineapple
1/2 c. pecans or walnuts
1 c. chopped banana

CREAM CHEESE GLAZE:

1 (3 oz.) pkg. cream cheese
1/2 c. powdered sugar
3 tbsp. butter
1 tsp. vanilla
1 1/2 tbsp. milk

In large bowl mix flour, sugar or honey, salt, baking soda and cinnamon. In a small bowl, beat eggs and oil well with mixer. Pour two mixtures together and with a spoon stir until moist. Stir in vanilla, pineapple, nuts and bananas. Spoon into greased 16 cup microwave ring mold. Microwave at high for 9 to 12 minutes. Rotate cake 1/4 turn every 3 minutes. Invert 5 minutes after done.

In a small bowl place cheese, microwave on high 1/4 to 1/2 minute. Add powdered sugar, butter, milk and vanilla. Beat until smooth. Frost cake.

Since microwave ovens vary in power, you may need to adjust your cooking time.
