EDITH'S COTTAGE CHEESE SALAD 
24 oz. cottage cheese
1/2 green pepper, chopped
1/4-1/3 (or more) cup sweet onion, chopped
1 large ripe tomatoe, chopped
1 leaf of crispy lettuce, shredded
seasoning salt (such as beau monde)
pepper

Combine all ingredients. In the Summertime, when the tomatoes are very ripe and juicy you may have to drain some of the juice so the salad won't be too runny.

My grandmother always liked to mix things with cottage cheese. This was one of her best creations.
