COTTAGE CHEESE SALAD 
1 box Jello (any flavor)
1 16 oz. small curd cottage cheese
1 12 oz. can of crushed pineapple
1 10 oz. tub of whipping cream

Drain the pineapple. Mix the cottage cheese and whipping cream together, until well blended. Next, stir in the pineapple. Mix well.

Stir in Jello mix. Mix well until Jello is completely dissolved. Chill 4 hours prior to serving.

I made this recipe and added fresh strawberries chopped very fine, I also used strawberry jello with of corse the crushed drained pineapple! Absolutely delicious! Great dish to bring to pass!

I have made this for years with many flavor combos. I do like to use sugar-free jello as it seems to dissolve better. I have used Mandarin oranges, crushed pineapple or fruit cocktail and many flavors of jello. To reduce the calories, use low fat cottage cheese, sugar-free jello & fat free Cool Whip.

My aunt Margie from Memphis TN. brought an elaborate version of this to a Thanksgiving 50 years ago. Our family and extended family and friends have been making this and their versions ever since. We add Mandarin Oranges and drained crushed pineapple along w. fresh coconut for holidays. We all cut it down to this simpler version for week day treats.
