BAKED APPLE PANCAKE 
2 Granny Smith apples
2 tsp. ground cinnamon
1/2 c. granulated sugar
1/2 c. brown sugar
1/3 c. pancake mix
1 tsp. baking powder
3 eggs, lightly beaten
3/4 c. buttermilk
5 tbsp. butter

Preheat oven to 375 degrees. Cut apples into quarters and remove cores. Slice apples into 1/4 inch thick pieces. Mix apples, cinnamon and sugar in separate bowl. Mix pancake mix, cake mix and baking powder into another bowl, then add buttermilk and eggs.

Melt butter in 10-inch cast iron skillet. Add apple mixture. Cover and cook for 10 minutes on low heat. Pour pancake/cake mixture over apples in skillet. Place skillet in oven and bake for 25-30 minutes, no longer. Flip pancake onto platter and serve. Serves 2.
