BAKED APPLE PANCAKE | |
This recipe provides a perfect use for our locally produced fruit. In our home, The Baked Apple Pancake is a Sunday morning tradition. Don't forget to top it off with some Granville produced Maple Syrup! 3 eggs 3 apples 3 tbsp. sugar 3 tbsp. butter 1/4 c. flour 1/2 c. milk Cinnamon Glass pie plate (9 inch preferred) 1. Preheat oven to 450 degrees. 2. Place 1 tablespoon butter in pie plate. 3. Place pie plate in oven until butter begins to bubble but not to the point of browning. 4. Mix completely with a whisk or beater the following: 1/2 c. milk 1/4 c. flour 3 eggs 1 tbsp. sugar Cinnamon to taste 5. Remove preheated pie plate from the oven and add the mixture. Return the pie plate to the oven and bake at 450 degrees. 6. With this recipe, timing is everything. Do not overcook, use a timer. Bake at 450 degrees for 8 minutes (7 1/2 minutes in a convection oven) and then reduce the heat to 375 degrees for another 8 minutes (7 1/2 for convection). 7. While the pancake is baking, prepare the apple compote topping. Add the following to a medium size pan: 3 sliced apples 2 tbsp. sugar 2 tbsp. butter Cinnamon to taste 8. Heat apple mixture on medium heat until the apples have softened. 9. Remove the apple pancake from the oven and have your guests ready to view and eat immediately. The pancake emerges from the oven looking like a souffle but this is very short lived. Top the pancake with the hot apple compote and maple syrup. I hope you have a sweet tooth! |
