APRICOT JAM TART 
2 c. sifted flour
1 c. softened butter
1 c. confectioners' sugar
1 tbsp. cinnamon
1/4 tsp. salt
3 egg yolks
Grated rind and juice of 1/2 lemon
Apricot jam

Knead together all ingredients except jam. Remove 1/3 of dough. Take 2/3 of dough and roll it 1/2 inch thick. Place in a square 8 inch pan. Cover with apricot jam. Roll remaining dough and cut into strips across top like lattice. Bake in 350 degree oven for 50 minutes. Cut into squares.
