SWEET POTATO PUDDING 
1 qt. (4 c.) grated sweet potato
4 eggs
1 tsp. nutmeg
1 tsp. cinnamon
2 c. evaporated milk
1/4 c. melted butter (1/2 stick)
1/4 tsp. salt
1 c. sugar
1 tsp. vanilla

Grate potato. Beat eggs well; add milk to eggs. Mix spices and sugar with potato; add melted butter and stir into milk and egg mixture. Add vanilla last. Pour into well greased pan and bake at 350 degrees for 1 hour. Spoon out or cut into squares and serve with sauce or cream.
