SWEET POTATO PUDDING 
1/2 c. butter
4 c. grated sweet potatoes
1 1/2 c. brown sugar
2 c. milk
2 eggs
1 tsp. nutmeg
1 tsp. vanilla
1 tsp. cinnamon
Nuts (optional)
Raisins (optional)

Cream butter and sugar. Add eggs, beating well. Grate potatoes in milk; add creamed mixture. Add remaining ingredients, mix well. Pour into buttered dish. Bake at 350 degrees for 1 hour or until firm. Serve plain or with whipped cream.
