SWEET POTATO PUDDING 
2 c. grated raw sweet potatoes
1 c. sugar
2 eggs
2 tsp. vanilla
1/2 tsp. salt
1/2 c. butter, melted
1 1/2 c. milk (if using skim, add 2 tbsp. flour)

Grate potatoes into the milk (keeps potatoes from darkening). Beat sugar and eggs together. Add to sweet potatoes and milk. Add salt and vanilla. Pour in melted butter last. Bake in greased 1 quart pan at 350 degrees for 1 1/4 hours. Recipe can be doubled.
