MOZZARELLA WITH TOMATOES & BASIL 
2 lb. fresh whole milk Mozzarella
3 lg. tomatoes
3 tbsp. chopped fresh basil
1/4 c. balsamic vinegar
1/3 c. extra virgin olive oil (more if you prefer)

Slice cheese and tomatoes into 1/2 inch rounds. Arrange alternately on large platter. Sprinkle with basil and vinegar. Pour oil over all. Balducci's in New York serves this with sun-dried tomatoes instead of fresh tomatoes.

Arrange the cheese and tomatoes on a serving dish and allow your guests to choose their own proportions of oil and vinegar.

Serves 6.
