TOMATO AND MOZZARELLA SALAD 
4 med. ripe tomatoes
8 oz. Mozzarella cheese
3 cloves garlic, chopped
3 tbsp. fresh basil, minced
3 tbsp. fresh parsley, minced
3 tbsp. olive oil
Fresh lemon juice
Salt and pepper to taste

Slice tomatoes in 1/2 inch rounds. Slice cheese in 1/4 inch rounds. Arrange on serving platter, overlapping slices. Combine remaining ingredients and drizzle over salad. Serves 4.
