TOMATO AND MOZZARELLA SALAD | |
6 lg. tomatoes, sliced 1/2 inch thick 8 oz. Mozzarella cheese, thinly sliced 1 red onion, thinly sliced 12 whole fresh basil leaves DRESSING: 3 tbsp. olive oil 3 tbsp. red wine vinegar 1 clove garlic, minced 3 fresh basil leaves, coarsely chopped 1/4 tsp. dried oregano Arrange the tomato slices, Mozzarella, onion, and basil in overlapping layers on a platter. Combine the dressing ingredients, mixing well. Drizzle the dressing over the salad and let marinate for 1 to 2 hours or serve at once. Yield: 8 servings. |
