TOMATO AND MOZZARELLA SALAD 
6 lg. tomatoes, sliced 1/2 inch thick
8 oz. Mozzarella cheese, thinly sliced
1 red onion, thinly sliced
12 whole fresh basil leaves

DRESSING:

3 tbsp. olive oil
3 tbsp. red wine vinegar
1 clove garlic, minced
3 fresh basil leaves, coarsely chopped
1/4 tsp. dried oregano

Arrange the tomato slices, Mozzarella, onion, and basil in overlapping layers on a platter. Combine the dressing ingredients, mixing well. Drizzle the dressing over the salad and let marinate for 1 to 2 hours or serve at once. Yield: 8 servings.

...and it's good! I layered mine so that it looked like a flower. Tomatoes on the bottom in a circle, cheese on top in a smaller circle. Wedges of purple onion placed in between the tomatoes, all curved in the same direction. Basil tucked in between the cheese. Repeat so that the circles begin to form a "flower". Used basil as the center of the flower. 2nd layer of onions I turned in the opposite direction of the first.
