TOMATO-MOZZARELLA SALAD 
1/2 lb. fresh Mozzarella cheese
1 head Boston lettuce
3 lg. tomatoes, sliced
1/4 tsp. salt
Vinaigrette dressing

Remove cheese from brine; slice cheese into 12 slices. Cut 12 rounds from cheese. Line serving platter or 6 salad plates with lettuce. Arrange tomato slices on lettuce, and sprinkle with salt. Top each tomato slice with a cheese round. Spoon dressing over salad and serve immediately.

VINAIGRETTE DRESSING:

1/2 c. olive oil
1/3 c. white wine vinegar
1 1/2 tbsp. chopped fresh basil
1/4 tsp. salt
1/8 tsp. freshly ground pepper

Combine all ingredients in a jar; cover tightly, and shake vigorously. Chill thoroughly.
