BAKED TOMATOES WITH MOZZARELLA
CHEESE
 
4 lg. tomatoes (1 3/4 lb.)
2 med. size onions
2 cloves garlic
2 tbsp. olive oil
1 tbsp. fresh thyme
2/3 lb. mozzarella cheese
1/2 tsp. salt
1/8 tsp. white pepper

Preheat oven to 425 degrees. Grease an oven proof dish with olive oil. Cut tomatoes and cheese into 1/2 inch thick slices. Place cheese and tomato slices into ovenproof dish in alternating layers. Peel and finely dice onions and garlic clove. Sprinkle salt over diced garlic clove and crush with a fork.

Combine olive oil, diced onions, garlic and pepper; sprinkle over tomato and cheese. Place dish on middle rack of oven and bake for 20 minutes. Wash and dry thyme and sprinkle over the dish. Bake 5 minutes longer. Serve hot or cold. 405 calories per serving.
