BLACK BOTTOM EGGNOG PIE | |
1 tbsp unflavored gelatin 1/3 c. sugar 2 tbsp cornstarch 1/4 tsp. salt 2 c. eggnog (the store-bought non-alcoholic kind) 1 tsp vanilla 1 1/2 squares of baker's semi-sweet chocolate 1/2 pint whipping cream 1/4 c. sugar 1 tsp. rum extract 1.) Dissolve unflavored gelatin with 1/4 c. water 2.) Combine the 1/3 c. sugar, the cornstarch, salt, and eggnog and cook until thick stirring constantly. When cooked add softened gelatin and stir until dissolved. Stir in 1 tsp of vanilla. Divide the mixture in half. 3.) Melt 1 1/2 squares semi-sweet chocolate and stir into one half of the mixture, cool the plain half. Pour chocolate mixture into a 9" prepared and baked pie shell. 4.) Whip 1/2 pint of whipping cream with 1/4 c. sugar and 1 tsp. rum extract until stiff peaks form. Fold into plain half of eggnog mixture. Layer plain half over chocolate layer. Garnish with chocolate shavings or nutmeg, if desired. Serve right away as is or chill. This pie is great at Thanksgiving, and/or Christmas. Submitted by: Mike Ford |
