TIPSY SWEET POTATO PUDDING | |
2 eggs 3/4 c. sugar 2 c. raw sweet potato, grated (about 2 potatoes) 1 (12 oz.) can evaporated milk 1/2 c. milk 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. salt 1 c. shredded sweet coconut 4 tbsp. butter, melted 2 tbsp. Jack Daniel whiskey Whip cream as garnish 1. Preheat oven to 350 degrees. Generously butter a 1 1/2 quart casserole dish. Vigorously beat eggs and sugar together in large bowl. Stir in all remaining ingredients except whipped cream. 2. Pour into prepared dish and bake 1 hour until barely firm. Serve tepid, garnished with whipped cream. |
