SWEET POTATO PUDDING 
2 c. grated raw sweet potatoes
1 c. milk
1 c. sugar
2 eggs, slightly beaten
2 tbsp. butter
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. salt

Grate the raw sweet potatoes into the milk to keep them from turning dark. Add other ingredients in order given above. Pour into well greased 1 1/2 quart casserole. Bake in oven for 1 hour at 350 degrees. Serve warm.
