POTATOES CHANTILLY 
4 c. mashed potatoes (instant are ok)
1/3 c. melted butter
1 1/2 tsp. salt
1/4 tsp. pepper
1 can O. & C. French onion rings
2/3 c. shredded cheddar cheese
1 c. heavy cream, whipped with 1/2 tsp. salt
1 tbsp. parsley flakes

Combine potatoes, butter, salt, and pepper. Mix well, then stir in all but 1/3 cup of the onion rings. Combine whipped cream and fold into grated cheese, blending well. Add to potato mixture and spoon mixture into 1 1/2 quart greased casserole.

Sprinkle top with remaining onions and parsley flakes. Bake at 325 degrees for 25 to 30 minutes. You can make this a day or two ahead and then bake.
