POTATOES CHANTILLY 
6 peeled, boiled potatoes
2 1/2 c. grated cheddar cheese
1/4 c. melted butter
1/3 c. chopped green onions
1 tsp. salt
1/4 tsp. pepper
2 c. sour cream (room temperature)

Coarsely mash potatoes and mix with 2 cups of the cheddar cheese, the melted butter, onions, salt, pepper and sour cream. Place in buttered baking dish, dot with 3 tablespoons butter and sprinkle remaining 1/2 cup of cheese over the top. Bake at 350 degrees for 25 minutes.
