FLORENTINE RICE 
1 c. rice
1 (10 oz.) pkg. frozen, chopped spinach
2 1/2 c. water
1/8 tsp. pepper
1 tsp. salt
3 tbsp. onion, chopped
1/4 c. butter
1 (8 oz.) pkg. cheddar cheese, cubed

Add rice, spinach and onion to boiling salted water. Cover, simmer for 25 minutes. Add remaining ingredients and mix well. Serves 6 to 8.
