TOMATO RELISH SALAD 
3 med. tomatoes, sliced
1 c. thinly sliced unpared cucumber
1 med. onion, thinly sliced
1/2 c. thinly sliced carrot rounds
1/2 c. thinly sliced celery
1/2 c. tarragon vinegar
1/3 c. water
1/4 c. sugar
1 tsp. paprika
1 tsp. basil leaves, crushed
1/2 tsp. salt
1/4 tsp. freshly ground pepper

Arrange the tomato slices, cucumber, onion, carrot rounds, and celery in rows in 10 x 6 x 1 1/2 inch baking dish. Combine vinegar, water, sugar, paprika, basil, salt, and pepper; pour over vegetables. Cover and chill at least 4 hours or overnight, turning vegetables occasionally. Makes 6 to 8 servings.
