PEACH RELISH SALAD 
2 c. diced raw carrots
1 lemon
1/4 c. sugar
1/2 tsp. salt
1/4 c. mayonnaise
6 peach halves

Put carrots and lemon through food chopper (medium blade), add sugar and salt, stir thoroughly and let stand in refrigerator for 30 minutes to blend flavors. Drain.

Mix in mayonnaise, arrange drained peach halves, cut side up, on lettuce cups and fill with the mixture. Makes 6 servings.
