CINNAMON-SCENTED FRENCH TOAST | |
1/2 c. evaporated skim milk 2 egg whites 1/8 tsp. ground cinnamon 1/8 tsp. grated nutmeg 8 slices whole wheat or whole grain bread 2 tbsp. canola oil 3 peaches, sliced 1 c. raspberries Healing foods. In a small bowl, whisk together milk, egg whites, cinnamon and nutmeg. Cut the bread in half for easier handling. Briefly soak the bread in the milk mixture, flopping the pieces to coat both sides. Coat a large nonstick frying pan with nonstick spray. Heat the pan over medium-high heat. Pour in 1 tablespoon of the oil and half of the bread and brown the pieces on both sides, about 2 1/2 minutes per side. Repeat with the remaining oil and bread. Serve warm, topped with peaches and raspberries. (You can mix other favorite fruits you like or lite and no sugar jellies and syrups.) Serves 4. |
