QUICHE LORRAINE 
1 lg. unbaked pie crust
1 tbsp. butter, softened
1/2 lb. bacon slices
1/4 lb. natural Swiss cheese
4 eggs
2 c. heavy cream
1/2 tsp. nutmeg

About 2 hours before serving, preheat oven to 425 degrees. Spread pie crust with butter. Fry bacon until crisp, lay on paper towel - crumble. Spread bacon and cheese in pie crust. Beat eggs with hand beater with remaining ingredients. Pour into crust; bake 15 minutes on 400 degrees. Turn oven to 325 degrees; bake 40 minutes until knife comes out clean. Let stand 10 minutes before slicing.
