QUICHE LORRAINE 
2 (9") pie shells
6-8 strips of bacon
3/4 lb. Gruyere cheese
1/4 lb. Swiss cheese
4 eggs
Salt & pepper
Butter
Nutmeg

Line 2 (9") pie plates with pastry and bake in 450 degree oven for 5 minutes. Fry 6 to 8 strips bacon. Drain. Crumble and press into bottom of pastry shell (can use mushrooms, onions, broccoli, ham). Add Gruyere and Swiss cheese (grated) to pastry shell. In bowl combine 4 eggs, salt, pinch each pepper and nutmeg. Beat. Pour into pastry shell. Top with several pats of butter. Bake in 375 degree oven for about 1 hour (until puffed and brown). Is ready when a knife plunged into center comes out clean.
