CHICKEN OR BEEF ENCHILADAS FAST 
2 (6 1/2 oz.) cans chicken or 1 1/2 lbs. browned ground beef
1 onion, chopped
1 (10 oz.) pkg. Longhorn cheese, grated
1 (10 oz.) pkg. corn tortillas
2 cans cream of mushroom soup
1 (8 oz.) carton sour cream
1 (4 oz.) can chopped green chilies

Mix chicken or beef, onion and half of grated cheese. Spread 2-3 heaping tablespoons of mixture on each tortilla and roll. Place in casserole dish. For sauce, mix soup, sour cream and chilies. pour over tortillas. Top with remaining grated cheese. Bake at 350 degrees for 30 minutes.
