MOM'S CHICKEN AND DUMPLINGS 
1 cut up chicken
1 tsp. salt
1 tsp. pepper
1/2 c. flour
1/2 c. onion, chopped
1 tbsp. oil
4 or 5 medium potatoes, cut in bite-sized pieces
water

Mix flour, salt and pepper. Coat chicken with flour mixture. Pan fry until golden brown. Add onion to pan and sauté until soft. Place in roaster pan. Add potatoes to chicken, cover with enough water to cover potatoes. Simmer on stove top at medium heat. When potatoes are softened, spoon dumplings on top of chicken and potatoes. Cook until set, about 10 minutes.

Serves 4 to 6.

Dumplings:

2 c. flour
1/4 tsp. salt
2 1/2 tsp. sugar
1 pkg dry yeast
1 c. warm milk
1 egg

Mix dry ingredients in bowl. Add egg and warm milk until dough is moistened. Knead with hand until dough comes clean from hand.
