TWICE-BAKED MASHED POTATOES 
4 to 5 Idaho potatoes
butter
sour cream (optional)
bacon bits
Cheddar cheese or Colby Jack cheese
salt
pepper

Peel potatoes and cook in water until tender. Drain. Mash potatoes with potato masher. Add desired amount of butter, cheese, sour cream and bacon bits. Add salt and pepper to taste. Pour mixture into casserole dish. Top with cheese and bake in oven at 350°F until cheese melts.
