RICOTTA EGG BISCUITS 
1/2 lb. butter
1 1/2 c. sugar
2 eggs
1 lb. Ricotta cheese
2 tsp. vanilla
4 c. flour
1 tsp. baking soda
1 tsp. baking powder

Cream butter and sugar well. Add eggs and Ricotta; beat for 1 minute. Add vanilla. Sift flour, baking soda, and baking powder together. Add gradually to beaten mixture and mix well. Drop by teaspoon on greased cookie sheet. Bake at 350 degrees for 12 to 13 minutes. Cool and ice with 3 cups powdered sugar, 4 to 5 tablespoons of milk (or more), and 2 teaspoons of lemon juice. Dip in icing.
