VENISON SAUSAGE 
Chop together 3 pounds of venison and 1 pound of pork fat. Put through a meat grinder or food processor. Add 2 tablespoons salt, 1 tablespoon brown sugar, 1 teaspoon pepper, 1/2 teaspoon sage, and 1/2 teaspoon ground cloves; mix well and shape into patties. Fry. Serve with your choice of eggs or red beans 'n rice.
