SCALLOPED TOMATO CASSEROLE 
3 1/2 c. peeled, chopped tomatoes
1 c. chopped onions
1/2 c. cheese flavored cracker crumbs
1 1/2 tsp. sugar
1 (8 oz.) carton of sour cream
1 1/2 c. seasoned croutons
1 tbsp. melted butter
1/2 tsp. salt

Layer half each of tomatoes, onions, cracker crumbs, sugar and salt in a greased 1 1/2 quart casserole dish. Repeat with remaining half. Bake at 325 degrees for 25 minutes. Spread sour cream on top. Sprinkle croutons on sour cream. Spoon melted butter on top of croutons. Bake an additional 10 minutes.
