SCALLOPED PINEAPPLE CASSEROLE 
1/2 c. unsalted butter
3/4 c. sugar
4 eggs
1 (20 oz.) can crushed pineapple, drained
1 tsp. lemon juice
1/4 tsp. nutmeg
3 c. white bread cubes, firmly packed

Cream butter and sugar in large bowl. Add eggs, 1 at a time, beating after each egg. Stir in pineapple, lemon juice and nutmeg. Fold in bread cubes and spoon into a buttered baking dish. Preheat oven to 350 degrees. Bake 1 hour or until golden brown. Serve with ham, pork roast as a side dish.
