CHRISTMAS COOKIES 
1 c. soft shortening
1 c. white sugar
1 c. brown sugar
2 eggs, unbeaten
1 tsp. vanilla
2 c. flour (plain)
1 tsp. baking soda
1 c. green candied cherries
1/2 tsp. baking powder
1/2 tsp. salt
2 c. uncooked oats
2 c. cornflakes, crushed
1 c. chopped pecans
1 c. raisins
1 c. coconut
1 c. red candied cherries

Cream shortening and sugars. Add eggs and vanilla extract. Sift in dry ingredients. Add oats, cornflakes, pecans, raisins, coconut and candied cherries. Work with hands until well mixed. Form into small balls and press slightly on cookie sheet. Bake at 375 degrees for 8-10 minutes. Makes 100 medium-sized cookies. These freeze well.
