CREAM OF BROCCOLI SOUP 
Lg. bunch fresh broccoli, cut up
1 lb. ham, diced
1 med. onion, chopped
Dash salt and pepper
2 qts. chicken broth or stock
1 pt. half and half cream
1/2 c. butter
1/2 c. flour
1/4 c. grated Parmesan cheese
1/4 c. parsley flakes
Yellow cheese
Oyster crackers

Combine broccoli and chicken broth; cook until tender. Saute ham, onions, salt, and pepper. Add to soup. Make white sauce with butter, flour, and half and half cream. Add Parmesan cheese and add mixture to soup. Spoon up in bowl. Sprinkle shredded yellow cheese on top and serve with oyster crackers.
