LEMON AND GARLIC CORNISH HEN 
1 whole rock Cornish hen
3 garlic cloves
1 lemon, divided
1 tbsp. butter
salt and pepper, to taste

Preheat oven to 350°F.

Pat dry completely thawed hen and place in a shallow roasting pan. Finely chop garlic and cover breast inside of skin and on top of leg meat. Season bird with salt and pepper. Slice lemon into thin wedges and completely cover breast. Top lemon wedges with butter.

Roast at 350°F for 1 to 1 1/2 hours until cooked thoroughly and juices run clear, basting frequently.

Slice remaining half of lemon for garnish or squeeze juice over cooked brown rice for a delicious side dish.
