HAWAIIAN MANGO BREAD | |
2 c. diced mango 1 1/2 c. sugar 2 tsp. baking soda 1/2 tsp. salt 3 eggs 1 tsp. vanilla 2 c. flour 1 c. shredded coconut 1/2 c. chopped nuts 3/4 c. vegetable oil 1/2 c. raisins Preheat oven to 350 degrees. Sift flour, salt, baking soda and sugar together in a bowl. Make a well and add the rest of the ingredients. Mix well. Pour into 2 greased 9 x 5 x 3 inch loaf pans and bake about 1 hour or until a toothpick inserted in the center of the pan comes out clean. Let cool in the pans on a rack for 5 minutes, then turn out onto the rack and let cool completely. These loaves freeze well. If you do freeze them, heat them in a 350 degree oven for a short while, then cool before slicing. |
