HERB-FRIED POTATOES 
3 potatoes
3 tbsp. butter
1/2 tsp. oregano
2 tbsp. chopped celery
2 tbsp. parsley
2 tbsp. minced onion
Salt and pepper to taste

Heat skillet, then melt butter in heavy skillet. Pare and cut potatoes in 1/8 inch slices (about 3 cups). Add potatoes to melted butter, cover and cook over medium heat for 10 minutes. Turn potatoes carefully. Cook uncovered 10 minutes more, turning occasionally to brown all sides. Last 5 minutes, sprinkle with remaining ingredients. Serves 4.
