VEGETABLE CASSEROLE 
1 bunch fresh broccoli
1/2 head cauliflower
4 lg. carrots
1/4 c. diced onions
2 tsp. oregano
2 1/2 c. grated cheese of choice (Cheddar, Swiss, Mozzarella)
Salt and pepper to taste
1/2 mushroom pieces (optional)

Steam vegetables, maintaining firm texture. Mix in oregano, mushrooms, salt and pepper and 2 cups of cheese. Top with balance of cheese. Bake 45 minutes at 325 degrees.
