LO-CAL VEGETABLES CASSEROLE 
1 tbsp. oil
1 sm. onion, sliced
8 oz. mushrooms, sliced
1 clove garlic, mashed

Add:

1 can stewed tomatoes, drained
Salt and pepper

TOPPING:

1 c. Mozzarella low sodium and skim milk cheese

Stir-fry: onion, garlic and mushrooms in oil, 8-10 minutes. Add stewed tomatoes. Pour in buttered ovenproof baking dish and top with Mozzarella cheese. Bake until cheese melts. Serves 4-6.
