VEGETABLE MEDLEY CASSEROLE 
1 (16 oz.) bag frozen broccoli, carrots and cauliflower, thawed and drained
1/2 (15 oz.) bag frozen corn with red and green peppers, thawed and drained
1 can cream of mushroom soup
1 c. shredded Swiss or Mozzarella cheese
8 oz. sour cream
1 lg. can Durkee French Fried onion rings
Pepper to taste

Combine vegetables, soup, 1/2 cup shredded cheese, sour cream, pepper and 1/2 can Durkee onions. Pour into 1 1/2 or 2 quart casserole dish. Bake covered at 350 degrees for 30 minutes. Top with remaining cheese and onion. Bake uncovered until cheese melts, about 5 minutes.
