EASY VEGETABLE CASSEROLE 
2 zucchini, sliced
1 lg. onion, sliced
10 mushrooms, sliced
Celery and carrots (optional)
16 oz. tomato sauce
1 to 2 c. broccoli
2 lg. tomatoes, sliced
1 green pepper, sliced
1/2 lb. Mozzarella cheese, grated
1/4 c. hard cheese, grated

Layer all vegetables in oiled baking pan. Top with tomato sauce, then cheeses. Bake at 350 degrees for 1 hour.

NOTE: Add any other vegetables of your choice.
