VEGETABLE CASSEROLE 
1/2 stick melted butter
1 tube Ritz crackers
16 oz. pkg. frozen broccoli
16 oz. pkg. frozen cauliflower
1 c. cooked butter beans, drained
1 c. diced celery
1 c. diced onions
8 oz. can water chestnuts, drained
1 c. salad dressing (Miracle Whip Light)
1 c. sour cream, light
1 1/2 c. grated cheese (mozzarella)

Cook broccoli and cauliflower 3 to 5 minutes; drain. Mix all ingredients together except Ritz crackers and butter. Crumble crackers and mix with melted butter. Sprinkle over top of vegetables. Bake 20 minutes at 325 degrees.
