CRISPY OATMEAL COOKIES 
1/2 c. butter, softened
1/2 c. sugar
1/2 c. brown sugar
1 egg
1/2 tsp. vanilla
3/4 c. flour (may use whole wheat)
1/2 tsp. baking soda
1/4 tsp. salt
1 1/2 c. quick-cooking rolled oats
1/2 c. sunflower seeds (may use chopped nuts)

Preheat oven to 375 degrees. Cream butter and sugar. Beat in egg and vanilla. Stir in remaining ingredients until mixed. Drop by rounded teaspoonfuls onto ungreased baking sheets. Bake approximately 12 minutes or until golden brown. 30-36 cookies.
