CRISPY OATMEAL COOKIES 
2 sticks butter
3/4 c. each brown and white sugar
2 eggs
1 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 c. oatmeal
1 c. chopped pecans

Cream butter, sugar, eggs until creamy. Add sifted dry ingredients; add vanilla, oats, nuts (raisins or chocolate chips if desired).

Bake in 300 degree oven 10-12 minutes. When cookies are done, run spatula under cookies and leave on cookie sheet until cooled. Yield: 3 dozen cookies.
