CHICKEN WITH BROCCOLI AND
MUSHROOMS
 
Juice of 1 lg. lemon
1/4 c. flour
1 tsp. paprika
2 whole boneless, skinless chicken breasts
1/3 c. vegetable oil
1 head fresh broccoli
8 oz. fresh mushrooms, sliced

Combine flour and paprika. Cut chicken breasts into 1/4 inch strips. Heat oil in skillet over medium heat. Dip chicken strips in lemon juice and then in flour mixture. When all strips are coated, place in skillet and cook for ten minutes, turning occasionally until brown.

While chicken is cooking, bring a pan of water to boiling on the stove. Cut broccoli into medium sized pieces. Add broccoli to boiling water, reduce heat and simmer for about five minutes until tender-crisp. Add mushrooms to skillet, cook for 1 minute. Drain broccoli and add to skillet. Toss quickly and serve.

This dish was amazing. My family loved it, even my picky kids! I removed all the chicken after browning, added 1 cup chicken stock to simmer the mushrooms. After ten minutes, added the chicken and broccoli back. Wish I had though ahead of time... this would have been great over brown rice! Next time! May try adding some variety to the "sauce"... maybe like white wine?
