CHICKEN WITH BROCCOLI AND
MUSHROOMS
 
1 1/2 to 2 lbs. chicken cutlets, cut into chunks
1 bunch of fresh broccoli, cut into chunks
1 lb. fresh mushrooms, sliced
2 tbsp. butter
2 tbsp. oil
1 c. chicken broth
1/2 c. white wine
2 cloves garlic, crushed
Salt and pepper to taste

In a large skillet, melt butter with oil. Saute garlic, then add chicken. Cook until slightly brown. In same skillet, add broccoli, mushrooms, broth, and wine; cover with lid and cook for 8-10 minutes. Serves 6.
