SQUASH-ZUCCHINI MUSHROOM MIX 
2 onions, chopped
2 tbsp. water
1 tbsp. oil
1 lb. each zucchini & yellow squash
1/8 tsp. thyme
Freshly ground pepper to taste
8 oz. fresh mushrooms

Saute onions in oil and water for about 7 minutes on high in microwave until onions are translucent. Add the squash, thyme and pepper and microwave on high for about 12 minutes until vegetables are just tender. Stir halfway through cooking time.

Add the mushrooms and cook 2 to 3 minutes more on high until the mushrooms are tender. Add more water in small amounts if necessary during cooking. Makes 10 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
